I was busy practicing on my new exquisite guitars when my sister called and handed me this yummy treat. It is a Rice Cake, also known as Bibingka. Kendrick and I shared it because Patrick is not interested. I usually eat it with  butter and shredded coconut meat as toppings, but because Kendrick doesn’t like the coconut,I didn’t put any and still,it is so yummy.
It is quite popular during Christmas season and nowadays, you could see a lot of little kiosk selling this goodies specially near churches and my sister bought it in place which is popular in selling good tasting Bibingka.

My niece and I bought this Bibingka few afternoons ago.  It’s her favorite afternoon snack and I’m in the mood to have some as well.  It was sold at the village entrance not too far from our place, maybe about 5 minutes walk.

Bibingka is another variation of Rice Cake in the Philippines and it is very popular during Christmas season. It was made with rice flour, coconut milk or water. Sometimes, vendor added more ingridients to it to improved its taste, like a sliced of red egg inside the cake, butter and then sprinkled it with shredded coconut or Pinipig (pounded immature rice grain) as toppings.
